Cheesy Tortellini and Sausage Bake

Ingredients:

  • 1 lb (about 500g) cheese-filled tortellini

  • 1 lb (about 450g) Italian sausage, casings removed

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can (14 oz) diced tomatoes, drained

  • 1 can (14 oz) tomato sauce

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and black pepper to taste

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  1. Cook the Tortellini:

    • Cook the cheese-filled tortellini according to the package instructions until just al dente. Drain and set aside.

  1. Cook the Sausage:

    • In a large oven-safe skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it into smaller pieces with a spoon. Cook until browned.

  1. Add Aromatics:

    • Add chopped onion and minced garlic to the skillet. Sauté until the onion is softened.

  1. Create the Tomato Sauce:

    • Stir in diced tomatoes, tomato sauce, dried oregano, and dried basil. Season with salt and black pepper. Simmer for about 5 minutes to let the flavors meld.

  1. Combine Tortellini and Sauce:

    • Add the cooked tortellini to the skillet, tossing to coat in the sauce.

  1. Top with Cheese:

    • Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top.

  1. Bake:

    • Transfer the skillet to the preheated oven and bake for about 20 minutes or until the cheese is melted and bubbly, and the edges are golden brown.

  1. Garnish and Serve:

    • Remove from the oven and let it cool for a few minutes.

    • Garnish with fresh basil or parsley if desired.

    • Serve directly from the skillet.
